O.K. so we're talking about Joust as a third-person competitive action game. Grab a mount, pick a weapon, and take off. The gameplay will feature arena style deathmatch, goal oriented sports-style competition, and racing. It would be similar to Sega's Rocket Jockey.
It would use the standard joypad/keyboard-mouse, but ideally would be played with motion control. The nunchuck/navtroller would be the reins and the wand would be the weapon. This might require a custom controller for Kinect. It would drop the need to constantly tap a button to flap the mounts wings. Instead it would focus on smart XYZ navigation. The main new mechanic would be the ability to power dive. Allowing for new attack-retreat situations.
The mounts would be the main options in the game. Anything bird-like would be available. The ostrich would be a general all-purpose ride. The giant chicken would have a more quickly refilling energy/nitro/sprint meter at the expense of a tighter turn radius. Fantastic creatures like a griffon or even the phoenix would be unlockable.
The maps would feature static and moving objects to navigate. Races would make use of 3D space rather than strictly track like courses. Ball-games(for lack of a better term) would accommodate varying score type situations. There could be a console, Forge style editor to make up for lack of mods. The phoenix and the troll would be included. The phoenix would be destroyable, but not easily and only with certain weapon types. The troll would only be able to affect a small area around lava, It's grasp would be difficult to escape and the player vulnerable to opponent attack.
The weapons would be limited to avoid possible over powered mount/weapon combos. The standard lance, a sword, a flail, a club. The way the were used, especially with motion controls, would determine their effectiveness. The lance would require a thrusting motion. The sword could only hit the side on which it was being held.
The rider would have a square retro, almost 3D Dot Game Heroes, look. The armour would allow for color and logo choice. This could also lead to some ridiculous, probably impossible console specific integration. The ability to import created avatars/miis and dress them in armour with their head/face still visible. A tool to create custom logos. An arena in Home where others could go and watch matches taking place.
I see no single-player portion although Black-Ops has shown that 'bots are possible on a console. Free practice and training modes would cover this. The standard category leaderboards and stats would be included.
Multiplayer would allow many options for both host and individual players. The ability to search for things like lance only matches or 4v4 Ball-games for instance. I don't see XP or leveling-up factoring in, but if it could be implemented smartly I wouldn't be against it. Ultimately I would like everyone from first-time to regular players to have the same initial options.
So yeah, Warner Bros. Interactive please make this and you'd have one confirmed sale.
